Snack time!
It's ready in a few minutes! It saves time, doesn't keep you occupied in preparing dishes which are very time consuming and over that it tastes delicious.
It is quite filling.
TAPENADE
Makes around 2-1/2 cups
Ingredients
1/4 cup black olives, pitted (rinse in cold water for less salt)
2-3 cloves of garlic, chopped (adjust to your personal taste)
1 cup of jarred roasted red peppers, drained and roughly chopped
1/2 cup fresh basil
1/3 cup virgin olive oil or avocado oil
1 cup of marinated artichoke hearts, drained and roughly chopped
2 tbs capers (rinse in cold water for less salt)
1 tbs fresh squeezed lemon juice
Salt and pepper to taste (taste while preparing before adding salt)
Instructions
Add all the above ingredients to a food processor or a blender (make tiny pieces) - don't blend!
Cover and refrigerate – Stays well refrigerated for approximately 2-3 weeks

CRISPY FLAT BREAD

Serves - 1
Ingredients
2 cup all-purpose flour
3 tbsp olive oil
1 clove garlic, crunched
1 tsp salt
3/4th cup beer (optional) Water can be added instead
1 tbsp dried herbs (thyme, rosemary, oregano, and/or marjoram)
Instructions
Preheat oven (480-490 F, 250-260 C). Put the baking tray into the oven. So it will be heated up, too.
Mix olive oil and garlic and set aside.
Sieve flour with salt and add beer/ water (your choice). Mix with hands until dough is formed. Knead dough for 5 minutes, with slightly floured hands. Keep the dough aside for about 10 minutes.
On a slightly floured working platform, roll out the dough with a rolling pin. It should be thin (if you like the bread very crispy, then roll out the dough very thin). Place the dough on a baking paper (size of the baking tray).
Brush the dough with the olive oil. Sprinkle it with herbs (you could use more or less than 1 tablespoon).
Put dough (on baking paper) on the baking tray in the oven and bake for about 5 - 10 minutes until it is golden brown. During baking, the bread will develop several "bubbles".
Take out of the oven and let it cool on a cooling rack. Serve slightly warm or cool.
NOTE-herbs: Use your favorite herbs. If you like the herbal flavors you can use more. You could also use an "Italian herb mix". You can also use fresh herbs (if at hand).
